Jellyfin is strictly on the server you're connected to. Is that the
main difference? I don't need the extra confusing stuff and love

Yes, I think that's the main difference. Plex requires an outside internet connection to work, because I think it "phones home" at times. Jellyfin is completely local as I understand it.
